I've only got experience with the standard 31/18/0 Dark pact build and the 30/0/21 Shadow Mastery/Ruin build. The first I would recommend primarily for levelling since the dark pact is awesome for drain tanking. SM/Ruin coupled with Shadow/DMG gear is imo simply put, the best way to go for MC raids. For PvP-only spec, I would probably go for CoEx+Soullink and with the same dmg gear as for MC (bar the fire res ;) ), but I don't know any specifics of such builds.

I would love to hear how you handled the lvl 60 paladin though, since they can remove all but our CoA. And fear/seduce is on the same diminishing returns. Especially since you aren't specced for Curse of Exhaustion.

I took down the pali twice with seduce + CoS + SBolt. and then i repeated that 4 times and then fear and SB untill he was out of mana and then i finished him off with SBolt+ Sburn and DC.

Demonology is pretty interesting.. would love to try it myself but im scared of my 40 g respec costs... and paying 80 just to get back to my old build in case I dont like it would be a bit crap

Then just wait for blizz to find out that warlocks still need improvements and you will get a free respec ;)
