Here I have included my current build (1st one, specced for high lvl instance runs)
And my old build (made for PvP mainly, but also usefull in instances)
I have not included the description on each skill, because I am a lazy git.

Enchantment:

5 - shield specialisation
5 - Thundering strikes (opens up the enchantment build, a must have)
1 - two handed weapons (ever seen a windfury trigger with a 51 dps mace?)
4 - anticipation (great for tanking and pvp, would have had it full if I had points)
5 - flurry (obviously a great help)

restoration:

5 - Improved healing wave ( 0.5 seconds less cast time is more than you think)
5 - ancestral healing (each time I crit a heal on the tank he gets 2k more armor)
2 - improved reincarnation
5 - even tide (shitty but needed)
1 -combat endurance (shitty but needed)
5 - tidal mastery (actually makes the mana spring usefull)
1 - natures swiftness (only a fool goes without this one)
1 - purification (shitty but needed)
1 - mana tide (hell yea)

Ok, as a comment to this:
The ones with (shitty but needed) next to them, are just things I have stuffed in to get 31 points so I can get mana tide. The restoration tree is mainly used by me for 4 things: ancestral healing, improved healing wave, Natures swiftness and mana tide.

Mana tide is a cloth users wet dream, and lvl 60 it recharges about 1k mana, giving a second wind when everything seems to be going down the drain, how ever, this comes at a high cost, namely that you lose some great things in the enchantment tree.

In enchantment I have gotten thundering strikes and flurry mostly for pvp, that 5% extra crit chance that triggers a 25% higher attackspeed is awesome.

As named this is an instance build, my equipment is mostly stamina and intelect, and therfore I am not so great a damage dealer as other shamen might be, who are specced for pvp. However I do my job better than most, even in high lvl instances I can take over for the main tank the last half a minute or what ever if he dies. Also, I got enough mana to keep healing the main tank, place totems and basically controll the flow of battle.

When it comes to my old pvp build, it was more focused around the enchantment tree:

5 - shield specialisation
5 - thundering strikes
2- improved ghostwolf (always nice to be ready to run away)
3 - Improved lightening shield (awesome spell indeed)
1 - two handed weapons
5 - anticipation
1 - parry (5% dodge chance, it is vubly)
2 - improved windfury

Restoration:
5 - improved healing wave
5 - ancestral healing
5 - Improved lesser healing wave
5 - tidal mastery
1- natures swiftness
3 - strength of earth totem (not really something you need, can be used elsewhere)

This is a very strong build in pvp, you suddenly get 10 more points in defense, 5 % parry chance, 20% increased attackpower of windfury + you got one insta cast heal of 1k, and your lesser heals are almost uninteruptable.

I loved this build, I was awesome in pvp, but not as usefull in instances. When I get over the lvl 60 instance mania I might respec back to this.

Ok I havnt trolled these forums for a while but as a lvl 60 shaman on Ravenscrest PvP server this is my personal Optimum build for my shaman.

I use a Fast 1 handed mace or dagger 400-500 dmg crits with WF with a shield most of the time and against cloth a Very high max dmg staff (Argent Crusader) 700-850 dmg crits with WF.
BTW I have 4.5k armour (inc Shield) 4.4K Health and 5.2K Mana.

Here it is let me know what u think as this build is a balance between dmg and being difficult to kill both in 1v1 and group v group.

I must point out that parry anticipation and improved grounding totem greatly enhance your survivability against most classes and are often overlooked.

Oh yeah and im quite a good backup healer for any instance :P.

lo m8, you should start a char on bloodscalp!!1

bk to the subect just wanted to ask if 5 points in Ancestral Knowledge is worth it? you 5.2k mana and what does it give you for 5 talent points? 250mama points? that aint even enough to cast a shock spell at 60 is it?

Yes you are quiet right to question the value of " Ancestral Knowledge Rank 5" its just that "shield specialisation rank 5" sucks even more :( .

Its just a means of getting the points down for the better talents further down the tree with the small bonus of getting maybe 1 more spell off before being out of mana. ;)
